Why egg stew?It is a popular stew mostly prepared by a number of people in Ghana. In this world most people love egg stew because it goes will a lot of dishes such as yam, plantain, rice , spaghetti and banku. As for me this is one of my favourite and i mostly prepare it during weekends. I know many of us can prepare it but there is one interesting thing about preparing egg stew the more water you add the less it taste.
Fish or mackerel
Add vegetable oil, allow it to heat for about 5 minutes and add your chopped onion
Add your tin tomatoes or fresh tomatoes and allow it to cook for about 5 -7 minutes
When your tomatoes is done add your seasoning powder which can be maggi or onga , also add your pepper to it and then stir the sauce.
Allow the sauce to be well cook that’s till you see the vegetable oil float on top of the sauce.
Add your fish or mackerel to the sauce and stir gently to avoid scattering.
Take your eggs and break them into a bowl , whisk the egg well. After which add your whisked egg to the sauce
Allow the egg settle before you begin to stir. You can stir after 5-7 minutes.
After that minutes you can stir it now to allow the uncooked side to become cooked. When you are done you can take it off fire and serve with any food such as rice, yam or plantain.
