In Ghana, pancake is a general term for a wide range of different dishes made from flour-based batter and cooked on a hot griddle. In most parts of the country, they are eaten for breakfast.

Conventional pancakes are made with flour, eggs, butter, or margarine, and milk or water. The ingredients may be mixed in different proportions to produce the desired texture. Very often soda is added to increase the volume and lighten the texture. This is a recipe for pancakes. It is very easy to make.

  • 1 cup/ all-purpose white flour
  • 1 large egg
  • 1/4 teaspoon nutmeg
  • ½ teaspoon vanilla essence
  • 3 tablespoons sugar
  • ½ teaspoon vanilla essence
  • 1 can 325ml Ideal Rich & Creamy full Cream Evaporated Milk
  • 1 large egg
  • 2 tablespoon melted butter or margarine
  • 4 tablespoons water
  • Powdered sugar (optional)

Method

  • Add 1 tablespoon of Instant or quick-raising Yeast, 1 cup All-purpose flour, 3 tablespoons of sugar, and 1 can of Ideal Rich & Creamy full Cream Evaporated Milk in a large bowl.
  • Mix the ingredients.
  • Add 2 eggs to the pancake batter and mix well.
  • Cover the bowl with a napkin for 30 minutes.
  • After the batter has doubled in size, preheat your fry pan. Then, add a teaspoon of salted butter or spray the pan with oil-based coating spray.
  • Pour a ladle full of pancake batter into the hot pan to cook.
  • Set your stove to medium and let each side cook for 2 -3 minutes.
